Rocket Mango Crunch Salad
This is a salad I can talk about at length. I absolutely unashamedly love it. It brings together summer and winter. Yin and Yang. Crunch and mush. Bitter and sweet. Like most things in life.
I first came across a version of it years ago, and since then, I’ve kept adjusting it. There’s no one fixed way to do it.I first came across a version of this years ago, on a food show with Malavika Singh in Delhi.
She had laid out a beautiful table, and more than the food, what stayed with me was how much thought she put into the people around it. For her, conversation was just as important as what was being served.
Her version of the salad was simpler - just rocket and mango. And even that felt complete.
Over the years, I’ve kept coming back to it, adjusting it depending on what’s in the fridge. There are probably a dozen versions of it now. This is one of them.

Method
Start by candying the walnuts. Spread them on a tray with a little sugar and place them in the oven for about 10 minutes, until they begin to brown. Set them aside to cool.
Wash the rocket in chilled water - it helps bring the leaves to life a bit.
Boil the beetroot until just tender, then slice.
Prepare the grapes and peppers.In a large bowl, bring everything together - the rocket, mango, beetroot, grapes, peppers, walnuts, and seeds.
Mix the dressing separately and pour it over just before serving. Toss gently.Start by toasting the nuts with a small sprinkle of sugar in the oven. Let them cool - they’ll crisp up as they sit.
Wash the rocket and let it dry properly.
In a bowl, combine the rocket, peppers, sun-dried tomatoes, fruit, and nuts.
Add feta if you like it - not everyone does, and it’s fine to leave it out.Mix the dressing separately, and pour it over just before serving. Toss lightly and garnish with toasted sesame seeds.

Don’t dress the salad too early - the leaves lose their texture.
And don’t feel the need to follow this exactly. This is one of those salads that changes depending on what you have.
